Baked Brie with Mixed Berry Compote


The How-To…

Prep Work

First, Preheat your oven to 350 degrees. A pie dish is ideal for this, but you can use any decorative baking dish that you would like. Next, prep the baking dish by lightly greasing it with about 1/2 of a tablespoon of coconut oil to prevent sticking. The easiest way is to take either a pastry brush or a paper towel and dip it into the coconut oil. Then use the brush or towel to apply to the pan. You can use this technique while the coconut oil is both solid, or melted. Place brie on the pan.

Mixed Berry Compote

Now that the pan is prepped, grab a medium-sized sauce-pot to make the compote in. In the sauce-pot mix together sugar, berries, lemon juice, lemon zest, and water. Slowly bring the ingredients to a simmer, over a low to medium flame. Make sure to stir frequently, using a non-metal spoon or whisk. Once the compote begins to bubble, slowly mix in corn starch, spreading evenly to prevent clumping. Lower the flame and let simmer until the sauce begins to thicken. This should take about 2-4 minutes. Again, stir frequently to prevent the bottom from burning. Once the sauce has thickened, turn off the heat and let sit until needed.

Time to Bake

By now the oven should be done preheating. Place brie in the oven and bake for 10 minutes. Just enough to begin softening the brie. Remove the brie from the oven, and pour compote around the wheel into the pan, creating a pool around the wheel. Bake for another 8-10 minutes, so that the brie is soft completely through (can be tested with a knife) and the compote has begun to bubble.

Remove from oven, and serve with crostini, fresh bread, crackers, or anything that you want to dip in cheese really.

Instructions

  1. Preheat oven to 350 degrees.
  2. Prep pie pan or another decorative baking dish for brie, by lightly greasing with either 1/2 tablespoon of coconut oil to prevent sticking. Place to the side while the oven is preheating.
  3. In a medium-sized saucepot, mixing together your sugar of choice, berries, lemon juice and zest, and water and bring to a simmer over low/medium heat.
  4. Once the mixture has begun to bubble, whisk in corn starch. Lower the flame to low heat, and simmer for about minutes until l sauce is thick and coats the back of the spoon.
  5. Turn off heat from compote and let rest until needed.
  6. Once the oven places brie in the oven and bake for 10 minutes.
  7. Remove brie from oven and top with compote and bake for another 8-10 minutes until the brie has softened, and compote has started to bubble.
  8. Remove from oven, and serve in a pan with bread, crackers, or side of choice.
