Garlic Cilantro Lime Chicken Thighs
/These Garlic Cilantro Lime Chicken Thighs are crispy on the outside and juicy inside, with fresh and flavorful seasonings. Incredibly easy to make, great for meal prep, and the perfect dinner for a weeknight dinner!
Tools and Supplies Needed:
1 Large Bowl OR Gallon Sized Ziplock Bag
1 Cutting Board and Chefs Knife
Measuring Cups & Measuring Spoons
Prep
Mince garlic
Zest and juice limes
Clean excess fat of chicken thighs if needed
Ingredients
2 pounds - Boneless Skinless, Chicken Thighs
3 Tablespoons - Fresh Lime Juice, Divided
1 tablespoon - Lime Zest
1/2 cup chopped - Fresh Cilantro
4 Tablespoons - Olive Oil
1 tablespoon - Minced Garlic
4 teaspoons - Chili Powder
2 teaspoons Chili Pepper Flakes
2 teaspoons - Ground Cumin
1 Tablespoon - Dried Parsley
2 teaspoons - Kosher Salt
2 teaspoons - Ground Black Pepper
2 teaspoons - Better Than Bullion

Directions
MARINADE: To prep the chicken thigh marinade: In a medium bowl OR gallon-size ziplock bag, add boneless skinless chicken thighs, lime juice, lime zest, fresh cilantro, 2 Tablespoons olive oil, minced garlic, chili powder, chili pepper flakes, ground cumin, dried parsley, kosher salt, ground black pepper, and the better than bullion base.
Massage ingredients into chicken thighs, and then cover the bowl (or seal the ziplock bag) and marinade for at least 2 hours or at most 3 days.
COOKING INSTRUCTIONS: Heat the remaining 1 tablespoon olive oil in a skillet OR grill pan over medium-high heat. Add chicken thighs to the grill pan in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165ºF (74ºC), about 4-5 minutes per side.
Serve immediately the Garlic Cilantro Lime Chicken Thighs ****or can be meal prepped and kept in the fridge for up to 3 days.
